Fermented Foods are some of the most healthiest and nutrient dense foods on the planet. You can take a simple head of cabbage and turn it into a probiotic powerhouse with little effort!
Now-- I'm not talking about the sauerkraut you will find in your average grocery store.. So many foods that were formerly fermented are not fermented or are pasteurized now-- losing so many enzymes and probiotoic properties! If you buy sauerkraut in the refrigerated section & it says "fermented" or "naturally cultured" you are looking in the right direction!
Below is an example of real store bought fermented sauerkraut and beet & cabbage salad. I have personally seen both at my local whole foods. You can find some fermented foods at local health food stores & at Trader Joe's.
