I'm a big fan of gummy everything! Gummy snacks, gummy bears, gummy vitamins, etc!
But I'm always on the lookout to make my own version of popular food items. I do this to make them healthier for myself, to avoid any GMO, and to avoid any ingredients & dyes I'm not a fan of.
Recently I have been studying gelatin and the amazing effects it has on our overall health. As a strict vegetarian before I stayed away from such things, but now not so much. Being a vegetarian for me was never really about any philosophical reasons- it was simply because whenever I ate meat I had headaches & I was never a big fan of meat. I liked sauces & spices that would be on meat- but the meat itself I was never really a big fan. So as a now semi-vegetarian, I have realized that my body runs really good when I have bone broth and occasionally choke down a steak or something. Then I realized how many amazing amino acids that gelatin has in it.
Once I realized how much amino acids I could consume simply by eating more gelatin, I was pretty convinced that I would be eating gelatin daily.
First I made gelatin capsules & then I made some gummies !
Here is a recipe for my apple cinnamon gummie snacks:
2/3 cup apple juice
4 tbsp of honey (or sweetener of choice)
1 tbsp cinnamon extract (I used healthy by choice brand)
1/3 cup gelatin
Juice of one lemon
In a sauce pan, heat apple juice & honey until the honey has melted.
Add in the lemon juice
Next add the gelatin & whisk it all together until gelatin has dissolved- you can add a little more or less depending on how you want your gummies
Next pour the mixture into molds- I bought silicon molds on amazon for a fair price.
Put them in the refrigerator until they set up & then pop them out of the mold! I keep mine in a mason jar that has a tight lid :)
My husband is a really big fan of burritos. He used to buy the frozen kind at the store and heat them up. I decided that we wouldn't be doing that since there are lots of chemicals and too much table salt in the store bought kind.
I decided to make some breakfast burritos so that we can freeze them. He simply takes one out of the freezer at night and puts it in the frige. He then in the morning pops one in the toaster oven for 20 minutes and then he has a yummy breakfast. I made 37 burritos yesterday & I made some breakfast ones, beef ones, and vegetarian ones. They cost me less than $1 each to make. I used all organic foods & even bought my meat from a butcher so they could be even cheaper for you.
Ingredients for Breakfast Burritos
1 lb sausage
2 cups of cheese
1 can salsa
1 dozen eggs
8-10 burrito style shells
1/2 green pepper
Scramble the eggs and set them aside.
Cook the sausage with the onions and green peppers. Some people don't like onions and green peppers- these are just optional.
Lay out a flat torilla
Add a small piece of egg
Scoop on some sausage
Add a couple pieces of potato
Add some salsa
Add some cheese & jalapeños
Fold the sides inward
Then begin to roll- keeping the edges folded inward
And then you're done!
