So as some of you may have heard I am currently attending a Naturopathic Medical School. Part of our homework is we have to teach a class based on what we learned from our previous class. I will always be posting some highlights, links to the visual aids, and other things we may have talked about during the class.
I originally planned to do my first class this last Thursday 7/25/13 - but it didn't work out because only 2 people showed up and it was thrown together really fast. Then today I realized I was going to be around my family and friends-- so why not try to get some of this class out of the way since I have to turn my homework by August 7th?!
SO- here are some of the highlights and what we talked about today during the class in case you missed it!
**We talked about foods and how quickly they go from your stomach to your intestines. We talked about foods you could eat together for optimal digestion. For example, Yogurt takes 2 hours to get from your stomach to your intestines. So you can add fruit which takes anywhere from 10-20 minutes to get to your intestines. So the fruit kind of gets your thyroid stimulated and starts proper digestion.
--The Importance of Fat--
**We live in country that says we can't eat fat because it will make us fat. In all actuality, in order to lose fat we have to eat healthy & good fats. Also toxins are stored in our fat and they can't get out until we start burning the fat that is in our bodies. The toxins can cause free radicals and other illness' in our bodies. Good fat nourishes our nerves, helps rebuild tissue, promotes brain growth, and many other things.
**Many people who are diabetic or pre-diabetic use artificial sugars in order to try to maintain a "normal" lifestyle. Truth is our bodies were never meant to live on a bunch of sugars anyways! Then you add in artificial sugars- which deaden your nerves- but in a way that causes neuropathy, headaches, and chronic pain. There are many other things you can do besides eat artificial sugars. We covered sugars that you can use that are safe.
**The average American consumes a lot of processed foods on a daily basis. Enriched flour is one of the worst and most common processed foods that we consume- it is in crackers, cookies, pastries, breads, etc. We talked about the different types of processed foods and how to start living a life free of processed foods. We also discussed a blog that I really like and brought a lot of awareness to cutting out processed foods. It is a blog that is run by a woman named Lisa Leake- she has tons of recipes, articles, and ways to live a healthy lifestyle without processed foods!

--Foods that are good for certain organs--
**If you spend some time and actually look at the fruits and vegetables you consume, you will see that they show resemblances to certain organs in our body. They also happen to have certain qualities that are great for the organ in which they resemble. For example:
*The cauliflower looks like the brain. It is chock full of brain building vitamins and minerals.
*The tomato that is organic and non GMO has 4 chambers in it, if you cut it horizontally. Which organ contains 4 chambers? The heart! Tomatoes have tons of Vitamin C, Vitamin K, and act as a blood purifier.
*The carrot if you cut it horizontally, has a small circle in the middle and resembles an eye. Pretty much everyone has heard that carrots are good for the eyes! They are full of Vitamin A and beta carotene which is the body uses to maintain proper eyesight.

to start canning & freezing !!
My in-laws have a cherry tree and I have been climbing up in that tree and picking as many cherries are humanly possible! The best thing is that they are completely and totally organic! I picked a bunch of them- brought them home- pitted them- and individually froze them. What is individually freezing? Well this is what I have found to be the best way to freeze fruit. What you do is get out a cookie sheet, line the cookie sheet with parchment paper, and then set the fruit on it and make sure that the fruit does not touch each other. Then pop them in the freezer about an hour or so depending on how big the fruit is. Then put them into freezer jars or bags and then leave them in the freezer. This makes it a lot easier when you are pulling fruit out for smoothies or a quick snack!
So far I have organic strawberries & organic cherries in the freezer for winter time!
Now for the canning!
I recently went to the farmer's market and picked up 4 quarts of huge organic amish tomatoes- they were the best tasting tomatoes I have ever tasted in my life! So I kept about 4 out to make my dinners with and decided to can the rest. I learned last year that I need to have more tomatoes canned because I did not have enough last year! I made it about 3 months and didn't have anymore salsa, marinara, or diced tomatoes left- so this year I am starting early.
This is what you do:
-Get a pot of boiling water
-Plop your tomatoes into the water- let them be in there about 2 minutes
-Immediately transfer them into ice cold water
-You will see the skin start to break apart
-Once they are in the cold water, peel the skin off carefully.
-I keep the seeds in my tomatoes most of the time- so if you don't want the seeds- open up the 4 chambers of the tomatoes, and then rinse out the seeds under the water
-Cut the tomatoes into chunks or leave them whole
-Put them into the jars
-I use the tomato juice as the "liquid" so I mush the tomatoes together add 1/2 tsp to 1 tsp of salt depending on if it is pint sized or quart sized
-Get your water bath canner fulled with water and boiling.
-Once boiling, carefully add your cans
-Set the timer for about 10 minutes
-Then remove carefully and set them onto a towel on the kitchen counter
-Listen for that beautiful 'Ping' sound- it is the best sound ever!!
