One of my favorite pass times in the whole entire world is to go blueberry (or any berry really) picking! I am one of those people who "go big or go home" when it comes to the "u pick" farms!
I will pick about 5 pounds or more of berries! I like to cook with berries, freeze them for smoothies, make jams, dehydrate some to make larabars & have as healthy snacks, use them in kombucha and more!
Recently in our CSA (Community Supported Agriculture) from our local farm, we have been getting two pints of blueberries every week! While my son and I love blueberries, I could tell that him and his little playdate buddies were getting really tired of eating plain blueberries as a snack. I began thinking about making some type of treat with them because I just can't stand for food to go to waste and I'm really tired of freezing everything. I started getting creative and ended up making blueberry muffins.
These were mindblowingly amazing. I literally ate 3 in one day.. okay I lied I ate 4 muffins! Holy moly. I never eat that many muffins in one day, it wasn't my most proud moment-- but boy were they ever good!
This morning I sat outside with my son and his little friend, Felix, and watched as they happily slid down their kiddie slide into their kiddie pool. After a while I pulled their little water filled diapers off and let them dry off and brought them a snack, blueberries, since we had an overabundance. I laughed to myself as my son laid on his belly while enjoying both the sun on his naked booty and the fresh blueberries. I snapped the photo above and sent it to a few friends and captioned it "You might have thought you were happy in your life... but you have never been as happy as Ezra and Felix eating blueberries at 9:00am while sunbathing naked."
I sat back in my chair and began to scroll through my Facebook feed and came across one of my friend's Facebook statuses about food. I've been watching her posts with envy lately because her and her husband are traveling in Europe for a while, I personally don't think they will come back-- stay tuned!
She was talking about how the food in Italy is different. She doesn't feel the need to overeat, even though she easily could. She doesn't crave sweets the way she used to and she when she eats sweets, such as a cookie, she is only eating half.
I always knew that food was different in different countries. Unfortunately in America, we have gotten away from somethings that other countries hold dear... What we put in our mouths. Seeing my friend's post today had me thinking about my muffins because I planned on making them again today. I had planned to use raw honey or coconut palm sugar in them instead of sugar to add the sweet appeal, but then I began to wonder if I even needed sugar or a sweetener in them at all. The muffins would contain blueberries, which when cooked, they turn even sweeter. My only concern was wondering if the muffins would turn out the same when cooked!
I decided to try my recipe out without a sweetener & it was a great decision. They came out similar to a biscuit consistency and flavor. I can honestly say that I enjoy these muffins..err.. biscuits more than the first batch. I liked that I could easily cut them in half and add some kerigold butter to it! The best part about these muffins was that my son and his friend enjoyed them so much that they continually asked for more!
So what is the moral to this little story? Maybe try making some of your recipes without sweetener of any kind! Maybe retrain your palate to accept flavors other than sweetness! Do we really need as much sweeteners as we are giving ourselves?
Recipe for Blueberry Muffins-- or biscuits-- your choice
Makes 12 Muffins/Biscuits
1/2 Cup Salted Butter
1/2 Cup Sugar, Coconut Palm, White, or 1/4 Cup Honey (this is if you want the muffins I originally made-- I would like to suggest trying without!)
2 Tsp Baking Powder
1/2 Tsp Pink Himalayan Sea Salt
1/2-3/4 Cup Milk (1/2 Cup for recipe with sugar, 3/4 Cup Milk for recipe without)
2 Cups of Flour (All Purpose Flour works fine)
2 Tsp Vanilla Extract
1 1/2 - 2 Cups FRESH Blueberries
2 Packets of Sugar in The Raw (opt)
-Preheat oven to 375
-In a standing mixer, cream butter and eggs together (and sugar if using sugar)
-Add in baking powder, salt, and vanilla.
-Next add in the milk.
-Slowly add the flour.
-Next FOLD the blueberries in gently.
-Line a muffin pan with muffin liners.
-Fill the liners all the way with batter
-Optional- shake sugar in the raw over the top.
-Bake for 30-35 minutes.
-Allow to cool before eating! Enjoy with some butter and a cup of tea!
