I had stepped onto the treadmill and plugged in my headphones. I took a deep breath and began to up the speed and incline. The familiar smell of rubber, sweat, cleaning products, and deodorants brought back memories of when I used to spend hours a day at the gym. I smiled to myself, thinking of the many times I had made myself proud in the gym. The gym was my happy place, a place where I could let go of all of my insecurities, worries, and doubts. In a world where I felt inferior, in the gym, I was strong.
Some people say the whole "pumpkin spice" season is a little overkill, but I beg to differ. Friends of mine would tell you that I'm a die hard pumpkin spice fan, as I eat pumpkin and pumpkin "spice" things year round. Pumpkin oats, pumpkin spice lattes (you can find my recipe on page 84 of my cookbook), pumpkin pound cake, and even pumpkin spice blondies.
So, you and your family just had the stomach virus. It pretty much knocked the whole family out for a few days but now everyone is back on their feet and ready to take on the world! No need to slow down right?
Wrong. I'm all about that sweet potato! I could (and sometimes do) eat sweet potatoes three or four times a day... I'm not kidding! I started eating them probably when I was about 20 years old. My husband and I had fallen on hard times and it was actually less expensive for us to shop at our local farmer's market for food. I had made friends with a farmer who would trade me produce for my products! One day, he gave me a 1/2 bushel of sweet potatoes for my birthday!
I smiled politely and thanked him and took this big ole bag of sweet potatoes home, the entire time wishing he would have given me carrots or beets (Yes at that time in my life I was a miserable, ungrateful little girl!). I gave some to my grandmother, who insisted I just eat them with brown sugar and butter, but I decided to make mashed sweet potatoes with our dinner that night. To my surprise, I loved them! They were what I had been missing my entire life! Funny thing is, I absolutely hated sweet potatoes as a child! It's funny how your palate changes as you age-- so mamas of picky eaters.. don't fret!
