Is it getting to be that time of the month where you are having to tighten your budget a bit? Are your kids getting ready to go back to school and you've spent a lot of extra cash on school clothing, notebooks, backpacks, crayons, and new tennis shoes? Did you recently get an unexpected bill in the mail?
Look, we all have those times! I've been working with clients for around five years now and the most common thing to "go" when the budget gets tight is healthy meals. I spend a lot of my time working with clients to understand that eating healthy doesn't have to be too expensive! You don't have to buy organic. You don't have to buy everything 100% fresh.
I like to remind clients that keeping your pantry stocked, or at least adding to it a little each month, can really help during times of financial strain! Also, purchasing fruits and veggies that keep longer is a good idea (think citrus fruits, cabbage, broccoli, carrots).
Some staples I like to keep in my pantry for lazy days or times that we really have to tighten up the budget are canned chicken, canned beans (and dried), diced tomatoes, garbanzo beans, dried fruits, and chocolate (just to name a few). I have come up with many low budget recipes that are healthy, real food recipes. Here is one of my husband's favorites-- cilantro lime chicken.
You can eat this on a bun, in a bowl over rice (or cauliflower rice), over quinoa, in a burrito, with nachos or plantain chips-- any way you want!
