I am always on the lookout to make inexpensive yummy meals. As a military wife we live on a limited income so I do my very best to save where I can and eat healthy.
I got a organic butternut squash, bag of organic potatoes, and a garlic bulb from my local farm box. I baked the butternut squash a few days ago and cut it up and put it in the fridge. So I created a new recipe. It's completely vegan (I didn't even mean to make it vegan)
Use organic whenever possible
3 tbsp coconut oil
1 medium onion (chopped)
3 cloves of garlic (chopped)
1 butternut squash (cooked & cubed)
3 medium potatoes sliced up
1 can of northern beans
6 cups vegetable broth
1 tsp oregano
1 tbsp parsley
Salt & pepper to taste
Put coconut oil, onion, and garlic in stock pot- simmer on low 3-5 minutes
Add in the potatoes & squash (cook 2 minutes)
Add in beans & broth
Add in spices
Bring to a boil make sure potatoes are soft
Add salt and pepper and enjoy!!
