My husband and I are really big fans of nachos! We recently decided that we were not going to buy a microwave- since we do not like the way they bring the nutritional value of our food down. We also gave up the super processed cheese that goes well over nachos.
I decided I would bake some nachos today so here is what I did
Chop up some bell peppers and onions. Sautee them together. I sprinkled some garlic, cumin, and chili powder over the top of them as they cooked. Preheated my oven to 350 while I was cooking up the peppers.
I put the nachos in a cast iron pan. Be sure to line the sides too so the cheese doesn't get cooked on. I poured some home-canned black beans over the chips (which were organic GMO free blue corn chips), next came the sauteed veggies, then a little bit of organic home-canned salsa, next came a few home-canned jalapenos, and then some cheddar cheese. For a side note, did you know that most companies dye the cheeses? Think about it logically for a second- Cheese is made from milk, milk is white.. for the most part cheese should be a whitesh color. The only place that I have found cheddar cheese that isn't orange was Whole Foods.
Pop the cast iron skillet into the oven for about 20 minutes. Top it with some salsa, some organic sour cream (make sure it has friendly bacteria), and some hot pepper sauce! Enjoy!! My husband and I just ate them right out of the pan :) Great for finger food nights!
