I don't know about you, but I am in love with all things coconut! I love it raw, toasted, cooked, dried, etc. I use coconut oil frequently, drink coconut milk & water, and I also eat coconut daily!
For this recipe, I recommend using a raw coconut- the kind ya crack open! You can get them for about $2 in the grocery store.
-Meat from the inside of 1 coconut
-1/4 C Raw Honey
-1/4 C Chopped Pecan
-Dash of Cinnamon
-Crack open the coconut
-Drain out the milk
-Cut the meat from the coconut
-Place in a food processor
-Process until desirable chunks, place in bowl
-In food processor, process the pecans if they are whole, add to bowl
-Add honey to bowl
-Mix together well
-On a cookie sheet- line with parchment paper, pour out the ingredients in the bowl and spread it across
-sprinkle cinnamon over it
-cook for about 15 minutes
-when it comes out of the oven, move the snack around on the cookie sheet
-enjoy! It is great in yogurt or by itself!
