If you are making the avocado version--- omit the butter or omit one avocado -- your choice! ![]() As I was scrolling through pinterest the other night I ran across this amazing looking recipe! I have to admit-- my mouth was watering and I felt like I NEEDED this bread! I haven't been one to have too many cravings so far in my pregnancy-- 3 to be exact! I might want something that isn't so healthy for me-- but unlike most pregnant women, I DO NOT see being pregnant as an excuse to eat unhealthy. I honestly feel like it is the most important time to eat healthy! So as I looked the recipe over a few times, I decided that I would make it but made quite a bit of changes to the recipe! Here are my changes: 3 Organic Mashed Bananas or 3 Organic Mashed Avocados (for those of you who don't want the banana aftertaste) 1/2 Cup Amish Butter or Kerigold- melted 3/4 Cup Raw Honey (you can use a whole cup if you want a sweeter tasting bread! especially if you make it with avocados instead of bananas!) 1 Tbsp Vanilla 1 egg 1/4 Tsp Pink Himalayan Sea Salt 1 Tsp Aluminum Free Baking Soda, I like this kind. 1/2 Cup Oat Flour (Or get your own organic, wheat free, oats and process them in the food processor until flour like) 1/2 Cup Almond Flour 3/4 Cup Cacao-- I used the darkest I could find, this kind 1/2 Cup Homemade Chocolate Chunks-- or regular chocolate chunks, I like this brand. 1/2 Cup Mini Chocolate Chips, I like this brand Follow the rest of the directions! Preheat oven to 350. Mix all but the chocolate chips & chunks together. Gently fold the chocolate chunks into the mixture. Put in a greased loaf pan. Sprinkle mini chips on top. Bake 55-60 minutes. This turned out amazing!! I absolutely loved it! I will be making it again-- maybe in muffins next time or donut shapes! I made the avocado version tonight and it is delicious!!! -- a few things to know -- The batter will be thicker-- almost like homemade cake. Try putting this in a cake pan, possibly. I made this in a bread pan and it was good but it's super moist like a cake-- so I recommend putting this in a cake pan! End result!! I was too impatient to let it cool in the loaf pan! Haha! Yay for being pregnant & not being able to be patient! I can't even feel bad--- this is brain food! It has avocados, honey, farm fresh egg, organic butter-- all good stuff! Good fats for the intestine, brain, and nerves!! |
