My husband is a big fan of burritos! I'm leaving town for about a week so I decided to make & freeze burritos for him to heat up in the toaster oven. He has all different kinda! Breakfast burritos some has sausage & egg and others chicken & egg. He has a variey of lunch/dinner burritos that have chicken, beans, & rice, burger & beans, burger, beans & rice, etc. Below I post a simple tutorial on how I make the burritos. They are very inexpensive to make as well!
This is the tutorial for the chicken, black bean, & rice burritos
Start by roasting a whole chicken! Feed your family and then take the left over chicken & shred it in the bowl
Pour in some fresh salsa- if you don't have any of your own just buy some at the store no worries!
Next strain your beans! I only buy dry beans & then cook them myself. They taste much better & are much cheaper. So once you have cooked your beans, strain them, and rinse them.
Take about 1 1/2 cups and put them in the food processor. Process on low until smooth
Next lay out a tortilla. You can make your own or buy some organic ones at the store. Put a small amount of beans - spread them about 2 1/2-3 inches.
Add some rice
Add some chicken
Add some cheese
Next fold the sides inward
Then the end forward. Carefully pull the bean/ meat mixture towards your body while securly rolling the burrito the rest of the way.
Wrap them, label them, and freeze them! Pull them out the night before and toast them in the toaster oven!
