Kombucha is one of my all time favorite drinks! It is full of enzymes (that help you digest and absorb food), friendly bacteria (probiotics), and full on yummy flavor! It is great as a drink to have daily and is wonderful for those people who are trying to rebuild their gut lining.
Buying kombucha by the bottle can be rather expensive- which I soon found out! (I could drink a bottle or two a day!). So I set out on a mission to learn to make my own & then found out that lots of people have been making their own for a long time! So I purchased a pretty cool starter kit (since I couldn't find anyone around me who had a starter for me) and then starting brewing my tea. I had some trial and errors, but this has been the best fermentation for me!
-Get your scoby (starter) and make sure it is ready.
-Brew about a gallon of tea. I used black tea and made it pretty strong.
-Add about 1 1/2 cups of sugar to the tea and dissolve it (yes real sugar, this is what the bacteria and yeast will eat)
-Let the sweet tea cool completely to room temperature.
-Once cooled, add about 1 bottle of plain kombucha and the scoby.
-Cover the top with cheese cloth or a towel- you don't want fruit flies to get in.
-When I did my very first ferment, I waited about 3 weeks until I went on to my second. But once you keep a continuous brew going, it will be ready in about 1 week- maybe sooner.
-For my second ferment I got some pretty cool jars to ensure carbonation- you can find them here.
-I added some fruit for second fermentation and flavor in there. You can use some juice too.
-Then close the lid and put it in the cabinet for about a week.
-When you open it there will be lots of carbonation! Enjoy-- I know I do!
