A lot of foodies have posted recipes about lacto-fermented carrots, pickles, beets, etc.
Here is the recipe I use!
What you need:
(Use organic whenever possible)
3 large carrots
1/2 med onion
2-3 garlic cloves
2 sprigs of dill
2 tsp of whey
1/2 tsp sea salt
Slice your onions- put 1/2 at the bottom of the jar
Peel & chop your garlic - put half in the bottom of the jar
Slice your carrots and make "sticks"
Put your carrots into the jar
Add the rest of the onion, garlic, and dill
Add 2 tsp of whey
Add a half tsp of salt
Pour purified water over the carrots, leaving about 1/2 inch of headspace
Add a lid!
I let mine sit 2 weeks before putting them in the refrigerator. Unscrew the kid a few times to let the gas out!
