I have run across many different lemon pepper chicken recipes. I was sad to see that so many of them are basically by using the "spice" called "lemon pepper". I decided to come up with a way to make lemon pepper chicken for my husband without using the concoction you buy at the store. This is much healthier & you know exactly what you are putting on your chicken!
Ingredients: (Serves 3)
(Use organic, free range, and fresh ingredients whenever possible)
-2 Chicken Breasts
-2 Organic Lemons (zest from one of them, juice from both)
-1 tsp black pepper
-1 tsp garlic
-1/2 tsp oregano
-In a small bowl, combine garlic, oregeno, black pepper, and zest from one lemon. Mix well.
-Take 2 chicken breasts and cut each of them in half. This step isn't as important, it just makes it so the chicken cooks quicker. You will cube the chicken in the end anyways.
-Sprinkle the chicken breasts with the spice mixture and put them in a hot skillet.
-Cook the chicken a few minutes on each side. Then take the juice from one lemon and squeeze it over the chicken. Continue cooking. Toss the lemon in with the chicken.
-The skillet will start to look like the spices and whatnot are burning. Add about 1/2 cup water and let it cook down until it has evaporated.
-Once the water has evaporated, take the chicken out of the skillet and cube it. It probably still needs a little bit more cooking, this is okay.
-Put the cubed chicken back into the skillet, add 1/2 cup water, the juice of the second lemon, and the squeezed lemon itself.
-Cook until the water has full evaporated.
-Serve over rice, in a salad, with cottage cheese, etc!
