Yummy! Asparagus is now in season where I live and I just LOVE it!
Here is a new recipe I came up with and the hubby and I love it!
1 small onion chopped
1 handful bunch of asparagus chopped
4 red potatoes sliced
1 quart chicken bone broth
1 can coconut milk, cream removed
1 tsp garlic
1/2 tsp smoked paprika
1/4 tsp oregano
2 tbsp butter
1 tbsp arrow root powder
Chop up onions and asaparagus and add them to a stock put on medium high heat with butter. Satuee until onions are soft.
Add potatoes and mix together well
Next add your chicken broth & coconut milk. I remove the cream to make ice cream with later :)
Let boil until potatoes are soft
When potatoes are soft... Add arrowroot powder. Tip! Mix arrow root powder in a little water first to make sure it doesn't clump up!
Now turn off the heat and let it sit with the lid on for a few minutes!
After it has sat for a few minutes, dish it out and garnish with sour cream or coconut cream! Enjoy! We added some saracha to it as well!
