![]() I have spent quite a bit of time trying to make lactation cookies that weren't just oatmeal cookies with brewer's yeast... Most of the recipes I found on line were full of sugar but didn't have much in them that were actually good for you.. So after much searching.. I came up with a lactation cookie of my own and to my surprise they were AMAZING! Not too sweet and have almost a buttery taste! So here is the recipe!! Ingredients: 3/4 Cup Coconut Oil 1/3 Cup Flaxseed 3/4 Cup Sugar (or 1/2 Cup Honey) 2 Tsp Black Strap Molasses 2 Eggs 2 Tsp Vanilla Extract 2 Cups Organic Self Rising Wheat Flour (Biodynamic if you can find it) 1 Tsp Baking Soda 1 Tsp Ground Fenugreek (buy it here) 1 Tsp Ground Cinnamon 1 Tsp Ground Ginger 1/2 Tsp Ground Nutmeg 3 Cups Gluten Free Oats (The gluten free part is important! If they are gluten free many people have found that they get better results from gluten free oats rather than regular) Opt: 2-3 Tbsp Brewers Yeast 1/4 Cup Mini Chocolate Chips Directions: - Prehead oven to 350 - Put coconut oil, Sugar, Flaxseed, Eggs, Spices, Molasses, Baking Soda, and Vanilla in standing mixer and mix until somewhat thick. - SLOWLY add in 1/2 cup flour and 1/2 cup of oats at a time. - Mix until good cookie dough consistency. - Using a cookie scoop, place cookie dough on cookie sheets with parchment paper. - Bake for 12 minutes Enjoy with a cup of Mrs Patel's Tea!! |
