This week from our CSA my husband and I got a lot of stuff! Turnips with greens Radishes with greens Flat leaf kale "Funky leaf kale" (as my husband calls it) Romaine lettuce Red leaf romaine Some herbs Box of fresh eggs Most people throw out the tops of their root vegetables and I can't believe it! They are the best part! They are so good for you and are so yummy!
What I do is chop off the tops & wash them. I then chop up the greens and put them in big bags in the refrigerator so that I can just grab a handful of them! This was what I made! I call it: Farmers rice & greens 1 cup of rice (cook it in the rice cooker with cumin seeds) 2-3 handfuls of greens (mine were kale & radish greens) 1 green onion sliced 2-3 cloves of garlic chopped 1/2 tsp garlic powder 1/2 tsp hot paprika (or cayenne pepper) 1/4 tsp ginger 1 tbsp balsamic vinegar 2 tbsp coconut oil Opt sweet potato (I had a bakes sweet potato in the frige) I had 2 tbsp coconut oil with some green onions chopped and 2 cloves of garlic. Sautéed them for a few minutes. Added in a baked sweet potato, sautéed for a few minutes. Added 2-3 handfuls of mixed greens (kale, radish greens, and some random one lol) then sautéed for a minute. Then added in cooked rice. I added 1/2 tsp hot paprika, 1/2 tsp ginger, 1/4 tsp onion powder, 1/2 tsp garlic powder, and 1 tbsp balsamic vinegar! I are mine with hot sauce & sour cream! |
