I love to use vegetable broth! I drink it for a meal, add it to soups, use it when I cook rice, and many other things! It is fairly simple! All you need is some vegetable scraps or here is the generic recipe:
*use organic whenever possible*
1 large (2 small) potatoes with skins
6-7 stalks of celery
1 medium onion (leave the skin on)
2-3 cloves of garlic
When you are searching for onions and potatoes- be sure to buy them organic! Potatoes are sprayed far more than any other vegetable. Onions get a lot of sprays too!
I leave the skins on my carrots! You can sometimes find local farmers who don't want the "ugly" carrots so you can get them at discounted prices!
Dump everything into a stock pot
Fill with water & let it boil for about 30-45 minutes! Strain the veggies out - I feed mine to my dog or sometimes my hubby eats them :) and enjoy your broth! Feel free to add your favorite herbs and spices as well!
