This year for Mother's Day I invited my mother, aunt, and cousins over to my house to host a dinner & movie night. My mother recently had a slip and fall that was pretty
serious and she is still recovering, so it was nice to get her out of the house without her having to deal with the stress of being in public.
I made a vegetarian lasagna which was a smash hit! The reason it has taken me so long to post this is because a few people have told me they don't like seeing my recipes on their newsfeed all of the time. So I haven't posted in a few days but then I had some people asking me "Where are your recipes?! I miss them!"- So now I will continue posting my recipes and if people don't like it they can unsubscribe to my page if they would like-- no hard feelings here!
So without further due- here is my recipe:
1 box lasagna noodles
2 cans organic tomato sauce
1 can organic diced tomatoes
2 organic zucchini
1 Cup fresh organic mushrooms
1 large carrot
1 container full fat organic
3 organic brown eggs
1 Cup Fresh Mozzarella Cheese
Fresh Parmesan Cheese
2 Cup Fresh Spinach
1 onion chopped
3 garlic cloves chopped
1 handful fresh basil
-First off, chop all veggies, grate cheeses, and mix the cottage cheese and eggs together.
-Next, in a glass pan, pour diced tomatoes down as first layer
-Layer 3 noodles across the pan
-Put a thin layer of cottage cheese & egg mixture down on top of the noodles
-Next put some spinach down
-On top of the spinach put 3 more noodles across
-On top of the noodles pour a thin layer of tomato sauce (if using onions, garlic, and basil you can put some on here)
-Next pour some mushrooms on
-Add 3 more noodles
-Put a thin layer of cottage cheese & egg mixture
-Add 3 more noodles on top of that
-Put down some more tomato sauce
-Next put down some sliced carrots & zucchini
-Next put down 3 more noodles
-Add some spinach & mushrooms
-Add some sauce (by this time you should be done with the first can of sauce)
-Add 3 more noodles
-Pour the last container of sauce on the noodles
-Pour the cheese on top
-Bake at 300-350 for about 2 hours and enjoy!
